We made these baked broccoli bites with the intention of recreating a healthier version of fried broccoli cheddar bites. Instead, they came out more like quiche cookies, which sounds a little gross but are actually kind of amazing. They’re a fantastic party appetizer, and you can even eat the leftovers for brunch the next day. You can make them gluten free by using crushed Rice Chex instead of regular breadcrumbs. Feel free to substitute the cheddar for your favorite type of cheese.
